If adding blueberries: Add to regular bowl: blueberries If blueberries are frozen, put them in the microwave at 75% power for 30 seconds. Sprinkle flour on top of the blueberries (so the blueberries won't sink to the bottom). Stir with a fork or spoon until mixed. Set aside. Add to medium mixing bowl: 250 g (2 cups) flour 20 g (4 tsp) baking powder 6 g (1 tsp) salt 28 g (1/8 cup packed) brown sugar Whisk until combined (about 30 seconds). Set aside. Plug in the griddle. Set temperature to 325° F (163° C). Using a spatula, spread coconut oil on the griddle. Cover the entire griddle. Add to glass measuring cup: 490 g (2 cups) milk 2 eggs (100 g) Whisk until combined (about 30 seconds). Set aside. Flick some water on the griddle. If it sizzles, it is ready. If not, wait. (It shouldn't take long to heat up.) Place the ingredients next to the griddle. Pour all of the milk/egg mixture into the dry ingredients. Whisk until most of the dry ingredients have become wet (about 30 seconds). The mixture should be lumpy, not smooth. Do not over-mix. Add to medium mixing bowl: melted butter Whisk until combined. Do not over-mix. Optionally, add blueberries to the batter. (You can also sprinkle a few blueberries on top of the batter after it is on the griddle.) Using a 1/4 cup cookie scoop or measuring cup, scoop the batter onto the griddle. You should be able to fit 8 pancakes at a time. After about 3 minutes, the bubbles on top of the pancake will pop and form craters. Once this happens, using a lifter spatula, check the bottom of the pancakes to see if it looks done, and then flip the pancakes over. After about 3 minutes, move the first batch of pancakes from the griddle to a plate. Before pouring another batch, use the spatula to spread more coconut oil on the griddle.
