View Large Image Pancakes Recipe Get ingredients: 2 tsp butter (unsalted, melted) 2 eggs (room temperature) 4 tsp baking powder blueberries (optional) 16 oz (2 cups) milk 1 oz (1/8 cup packed) brown sugar (light) 9 oz (2 cups) flour (all-purpose or whole wheat) 1 tsp salt coconut oil digital scale regular bowl medium mixing bowl large whisk small whisk griddle spatula glass measuring cup (3 cups or more) plastic lifter spatula large cookie scoop (1/4 cup) 1 tsp Melt 1 oz (1/8 cup) butter in the microwave at 100% power for 30 seconds (or until completely melted). Set aside. If adding blueberries: Add to regular bowl: blueberries If blueberries are frozen, put them in the microwave at 75% power for 30 seconds. Sprinkle flour on top of the blueberries (so the blueberries won't sink to the bottom). Stir with a fork until mixed. Set aside. Add to medium mixing bowl: 9 oz (2 cups) flour 4 tsp baking powder 1 tsp salt 1 oz (1/8 cup packed) brown sugar Stir with a whisk until combined (about 30 seconds). Set aside. Plug in the griddle. Set temperature to 325° F (163° C). Using a spatula, spread coconut oil on the griddle. Cover the entire griddle. Add to glass measuring cup: 16 oz (2 cups) milk 2 eggs Stir with a whisk until combined (about 30 seconds). Set aside. Flick some water on the griddle. If it sizzles, it is ready. If not, wait. (It shouldn't take long to heat up.) Place the ingredients next to the griddle. Pour all of the milk/egg mixture into the dry ingredients. Whisk until most of the dry ingredients have become wet (about 30 seconds). The mixture should be lumpy, not smooth. Do not over mix. Add to medium mixing bowl: 2 tsp melted butter Whisk until combined. Do not over mix. Optionally, add blueberries to the batter. (You can also sprinkle a few blueberries on top of the batter after it is on the griddle.) Using a 1/4 cup cookie scoop or measuring cup, scoop the batter onto the griddle. You should be able to fit 8 pancakes at a time. After about 3 minutes, the bubbles on top of the pancake will pop and form craters. Once this happens, using a lifter spatula, check the bottom of the pancakes to see if it looks done, and then flip the pancakes over. After about 3 minutes, move the first batch of pancakes from the griddle to a plate. Before pouring another batch, use the spatula to spread more coconut oil on the griddle.
